I don’t know if it’s the same that I watched, but it’s super interesting. They simulated a negotiation for a load of cheese. For what I could understand, one says the price and extends his hand. The other slaps the hand if he doesn’t agree. And they keep doing this until the price is agreed.

Oh, and I have been waxing these cheeses as well at Uniekaas near Alkmaar. The most mind numbing job I ever had. Kilometers of cheese, a cart and brush…take the cheese out of the storage, turn it on the other side, wax that cheese and put it back.

I used to live in Alkmaar 30 years ago. Went to school there too before, when I lived in Bergen (North Holland). Too much tourists there.
